Simple cream broccoli soup

For this simple and delicious soup, you'll need the following:

1 large or 2 small broccoli (about 500-600 g)
1 potato (medium size)
1 clove garlic
some olive oil
salt and pepper to taste

Peel the potato, cut it into cubes and place it in some cold water (about 0.5 l). When it boils, cook the potato for about 10 minutes.
In the meantime, wash the broccoli, and tear to little flowers or cut it, if you prefer. Clean garlic.
Once the potato cooks for 10 minutes, salt it and add prepared broccoli and garlic and pour  more water (so that the broccoli is covered). Cook until are both finished.
Drain cooked broccoli and potatoes, and leave the water from cooking. Hand mixer (blender) Mixing up broccoli, switch back in a cooking pot, add water from cooking, how much is necessary to have a nice, creamy soup, and 1 tablespoon of olive oil (and salt, if you need).

When it boils again, infuse fresh ground pepper and serve ...
Soup can be served with toasted bread cubes (croutons) and (or) with a few shavings of cheese for grating (Parmigiano Reggiano, Grana Padano, ...)
